Anwendung: Chitinase ist eine Hydrolase, welches durch Endohydrolyse Chitin in Oligomere von N-Acetylglucosamin und Chitobiose zerlegt. Chitinasen sind meist extrazellulär lokalisierte Glycoproteine, die u.a. in Pflanzen, Insekten und vielen Schimmelpilzen vorkommen.
